Groundnut Stew with Tofu (Dovi): Groundnut (peanut) stew made with a
combination of peanuts, peanut butter, onions, tomato, garlic, thyme and
spices, served over grilled tofu, yams, spinach, tomatoes, bell peppers,
onions, and toasted peanuts. Served with coconut rice. A dish from Zimbabwe(Pat’s Favorite)

DESSERT
Malva Pudding: Warm apricot and vanilla flavored cake soaked
with a sweetened cream sauce. Served topped with fresh strawberries and
whip cream. This recipe was first brought to our attention by Jo
and Bob Beck. Thank you to the Becks for giving us such culinary
delights.

Salmon Salad (Mishywa)
Salad of grilled salmon mixed with capers, fresh
tomato and sweet pickled red peppers and
served on a bed of spring mix lettuce with an avocado
wedge and toasted bread

Fried pastries filled with lightly curried potatoes and
vegetables. Served with a yogurt,
tomato and cucumber sauce
Beef Piripiri
Grilled strips of beef basted with piripiri, a seasoning
from Mozambique of lemon juice,
cayenne, and garlic
Crispy Fu Fu Balls
Fu Fu with peanuts fried crispy. Served with a
dipping sauce. Fu Fu, an African mainstay,
is made from mashed cassava
root, much like mashed potatoes
